Kirsine kodujuustukook




Vaja läheb

200 g Kalevi sidrunimaitselisi küpsiseid
100 g Eesti Taluvõid
400 g Alma kodujuustu 5%
300 g Alma vanillikohupiimakreemi 2,5%
250 g Jaani kondenspiima suhkruga
3 Linnu Talu kollast talumuna
1 tl kaneeli
1 sidruni riivitud koor
3 sl Veski Mati nisujahu
400 g Rimi hapusid kirsse


Purusta küpsised, lisa sulatatud või ning sega ühtlaseks massiks. Suru segu 28 cm läbimõõduga lahtikäivasse koogivormi.
Klopi munad õrnalt vispliga lahti. Sega sisse kodujuust, kohupiimakreem, kondenspiim, kaneel, sidruni riivitud koor ning kõige viimasena jahu.
Seejärel vala täidis küpsisepõhjale ning küpseta 175 kraadi juures 50 minutit.
Viimaks puista koogile katteks kirsid ning aseta külmikusse tunniks-kaheks jahtuma.

Vahepeal oleme elanud vaikset pereelu. Kõige mainimisväärsem üritus oligi ilmselt selle aasta Positivus kus Panda oli ametlik fotograaf (pildid allpool). Magasime autos. Sõime peamiselt jäätist ja pitsat. Mina põlesin päikest võttes ära. Vesi oli uskumatult soe. Kuna pesemisvõimalustega oli nagu oli siis käisin mina ennast meres pesemas (mille käigus kaotasin oma päikeseprillid ära). Õhtused valgustusdekoratsioonid tekitasid tunde nagu kõnniksid ringi muinasjutumaal. Junip, Ellie Goulding, Marten Kuningas, AlunaGeorge, Bastille ja The Kooks tegid pööraselt head live'd ning üleüldiselt oli meeldejääv üritus (minge kindlasti järgmisel aastal kui sellel ei jõudnud). 
Päris masendav oli pärast sellist nädalavahetust tagasi Tallinnasse tulla ning rutiinsesse argiellu pöörduda. Minu mujal olemise vajadus on sellest ajast saadik nii intensiivne olnud, et see on muutnud mu mõtlemise kohati depressiivseks. Millest tulenevalt olen omakorda olnud liiga mõtlematu Pandale öeldud sõnade suhtes. Ma olen nii tänulik, et ma olen sellise inimese enda kõrvale leidnud kes ei anna iial meie suhtes alla ning ma loodan, et ma suudan ka ajaga piisavalt kasvada, et tüli käigus sama mõistlikuks inimeseks jääda.

Long time, no porn (megapost with loads of pics and TWO RECIPES!)




First things first. Can't start this mother of all posts without some recipes!

Nom-b(e)ars

Shopping list:
1/3 cup or 100g of peanut butter 
1 teaspoon of vanilla or a few drops of vanilla extract
2 tablespoon of honey or agave syrup
250g of white or dark chocolate
1 1/2 cup of rice krispies 

What to do:
Heat the peanut butter and honey in a small pot until it starts to bubble. Stir in the vanilla. Now stir in the krispies in parts until covered. Scoop the mixture out of your pot, spread on a parchment paper and shape in to a nice flat rectangle. Use a chef knife to flatten it. Set it aside to cool. Melt the chocolate in a small pot and pour it on the peanut butter krispie brick. Throw that monster in the fridge for a hour, cut it into bite size bars and enjoy the sugar rush.

What-we-have-lying-around quiche
Since we had some pastry dough in the fridge, here's a quick and dirty summery quiche.

Shopping list:
Ready made pastry dough of any kind (make sure it's not sweet tho)
3 eggs
200ml of milk
200g of cheese
some feta
asparagus
broccoli
a handful of chopped mint and basil
175g of prosciutto

Roll your pastry out on the kitchen counter and transfer it to a pastry dish. Make sure it fit's all nice and snuggly. Press in the sides. Bake it for 10-15 minutes around 200*C. While your pastry is getting nice and crusty, steam the broccoli and asparagus. In a bowl whisk together the eggs, cheese, milk, basil and mint. Once your pastry is out of the oven, throw in the asparagus and broccoli. Pour over the egg mixture and cover it with prosciutto strips and bake for 30 minutes at 200*C.

On other news

Did we break up? Did we forgot to pay our cable bill? Did Panda move to Nepal where he will live as a goat? No! Tho Panda really want's to go to Nepal one day. We've been up to all kinds of silly shenanigans. First of all there was Telliskivi Street Food Festival we had to visit. What can we say, a whole lot of standing in lines. Luckily the weather was nice so we did our rounds trying to have a bite of everything. If bear stops resisting and finally agrees to let Panda have his own food truck, maybe you'll see us there next year serving you THE ROLL

We also had our wedding cherries popped (this is a porn blog after all), when Pandas old classmate got married. Wohoo! Kibe! Cute couple, cute place, FOOOOD! Be sure to visit Koluvere castle when you have a chance. Perfect place for a weekend getaway. We wanted to lock ourselves up in one of those comfy rooms and never leave but that wouldn't have been nice of us. You can call us Count Panda and Bear now. Yes you have to bow.

But that is not all. If you keep reading NOW you will get to read some more. Yauza! For the midsummer festivities we crammed ourselves inside a bus with five hundred old ladies who went to Estonian Open Air Museum. Terrified, we stayed on the bus and retreated to our friends place to have a proper FEAST. I'm not holding back on that word. By 1 pm we were so fat and lazy that we barely managed to order a cab. After having a gazillion course dinner with all kinds of tasty things (hats off to Mr. Olivers burgers!) we finished the course with some ribs (who does that) and skipped dessert (see, I'm not joking, it was a FEAST, nobody skips dessert). Malaysian Chicken Curry In Coconut Milk






What do you need

1 cup coconut milk
3 teaspoons of curry paste
1 tablespoon chilli flakes
The juice of one lime
2 cups of Jasmine rice
400 grams of chicken fillet
1 broccoli head
200 grams of asparagus
1 red onion
1 garlic clove
2 small papricas of each color (red, orange, yellow)
A handful of basil

This portion in enough for 4 people I'd say, but somehow we always manage to eat the whole thing.

What to do next

Wash the rice in a bowl until the water becomes clear. In a large pot bring the water to a boil. Add some lemon grass and basil inside the tea infuser. Now add the rice to the boiling water and throw the infuser in there. Let it cook under a lid for 18 minutes (over low heat). Remove from heat, fluff the rice up with a fork and let it cool for 5 minutes.

Clean the paprikas and cut into circles, now the onion. Chop the garlic into small pieces. Now cut off the broccoli florets, take the asparaguses and boil both over medium heat for 5 minutes. In a large pan heat coconut oil and sauté onion and garlic for a minute. On a smaller pan do the same with the paprikas. Cut the chicken fillet to as big or small pieces as you like and cook with onion and garlic for 5 minutes, add a pinch of salt. Now stir the coconut milk in there, also add the curry paste and lime juice. Throw in the paprikas, broccoli florets, asparaguses, basil leaves and chilli flakes and let it cook over a low heat for 15 minutes. Remove from heat and let it cool for 5 minutes.
Enjoy the meal with cold ginger beer!

A little something about our weekend

Well, it sucked, ain't going to sugarcoat it. We barely saw each other because we both had work. On Sunday we went to this event called Paar Hilpu, where Panda also had to work (scroll down to see the outcome). After a while Bear got bored and went food shopping instead to make this delicious meal by the time Panda got home. Also I changed the recipe a little bit - we put 6 teaspoons of curry paste into it, yeah... definitely don't try that at home... Oh, and we've now started to hang out five times a week, instead of three. So far so good... 0 dishes thrown (though if you ever feel like it Panda, please use the ugly green ones)... No pictures of us this time, no we're still obnoxious to be around because the honeymoon phase never seems to get over, it was just a rough week. But we'll try a little harder next week. After all this isn't supposed to be some boring a## regular food blog.
